OK, so a number of years ago I did an elimination diet which completely broke every preconceived notion I had around breakfast. The whole idea of "breakfast food" is a crock, and it's really just 'meal 1". Now, one of my fav breakfast foods is soup! Potato and ham, chicken and veg, hamburger soup, ham and zucchini etc etc. It's fast to heat, warm, nourishing, filling, balanced and full of veg, plus it's cheap!. We are a celiac house, and soup is so so easy to make gluten free, the majority already are!
We are big on the whole grilled meat and veg meals, keeping it really simple. A variety of seasonings makes chicken interesting and varied, and we can batch cook a bunch in advance. We also eat a lot of stir fry (with rice, or rice noodles), or I make a big batch of stew (beef and veg, chicken and veg etc).
The expensive bit of being gluten free is the substitutes, so if you avoid those and just focus on the naturally gluten free foods (proteins, veg, fruit, rice, legumes) it's pretty easy to be healthy, GF, and frugal!2 -
If want to eat cheap and gluten free just eat like an Indian or Chinese peasant.1

I second what @Alatariel75 and @acpgee recommended.
I routinely make poultry or fish with veggies, even for breakfast. You can shop cheaper cuts. GF and a few minutes in a skillet.
Got a blender? Protein powder of choice and fruit and veggies . Blitz. Drink. Alternatively you can use seeds of choice (pumpkin, chia) for protein and buy in bulk.
I sometimes sip on bone broth whenever- 10grams protein and low cal..
I do salads and throw in proteins of choice and additional veg.
Cauliflower rice makes great bowls with veggies and protein. Can make for week to grab and go.

For breakfast a lot of mornings I have a protein shake mixed with my iced coffee. I prefer the premier protein or pure protein drinks and add to either cold coffee or instant expresso. This has also helped eliminate my use of creamer in my coffee. As for other meals I started meal planning for a month and make only a few different meals to eat all month. Right now I have a chicken broccoli bake, potato soup, and tacos and they are all frozen as a serving.0
