Anyone know of any low carb vegetables?

Leafy greens & cruciferus - like spinach, kale, cabbage, lettuce, broccoli, cauliflower, Brussels sprouts, bok choy)
Green beans, asparagus
Celery, carrots, jicama (most root vegetables or anything that grows under the ground will be higher in carbs, e.g., potatoes)
Cucumbers, zucchini, yellow squash, spaghetti squash, pumpkin
Eggplant, peppers, mushrooms, okra

That's some I can think of off the top of my head. It's almost easier to list 'high carb' veggies - like corn, potatoes, peas, and beets (the starchy ones!)
