Allow goals to be settable as "less than" or "at least" or "unlimited" and unchanged by exercise

Please allow goals to be set as less than (maximum) or at least (minimum) or unlimited versus a hard target, and to not have those changed at all by exercise.
Reasoning: as a pre-diabetic, right now I'm solely focusing on smoothing glucose spikes and then lowering my overall glucose levels, with the help of a continuous glucose monitor, food tracking, and check-ins with my doctor.
So I want to:
... if I put in in a target of 100 g of something and intake 85 g of it, the system tells me I have not met my goal. Whereas I really have met my goal, because I ate less than 100 g.
... if I put in a target of 25 g of something, or 1200 calories overall, and intake 28 g of the item, or 1300 calories overall, the system tells me I have exceeded my goal. Whereas I really have met my goal, because I ingested at least 25 g of the item or at least 1200 calories.
... I have to put in a target for everything, even if I don't care to give it any sort of target at all. I do want to track all the usual things, but for now I don't want the system to ding me if it thinks I did or didn't meet that arbitrary amount.
I know we can change the values, but the point here with unlimited is to not have a target value at all, and thus just track the intake for reference purposes until such time as I do want to set a specific goal.
I find it hard to just ignore those things, because they have associated colors, progress bars, and over/under quantities all over the interface that jump out and beg notice. All of which is good if one does want progress brought to their attention, but is discouraging when one doesn't care to have a limit but still has to face indicators saying we haven't met a goal that we didn't want to set in the first place.
... if I exercise, I do not want the system to make any adjustments to any of my set parameters. I believe this is already in place regarding overall calories using the "Adjust my daily calorie goal" = Off setting. But I'm unclear as to whether or not turning that setting off also prevents the system from adjusting individual macronutrients targets as is described as a feature.
This kind of goal flexbility is one of only two things I'm missing as I test out myfitnesspal as an alternative to LoseIt!. But it is a big one. I'm hopeful it's something that will be seriously considered for a future update. :0)

So I want to:
- limit my carbohydrate intake to less than a certain amount,
- intake at least a certain amount of protein, fiber, and overall calories per day,
- track all the other usual suspects, but not set a max or min limit target -- effectively allowing it to be unlimited -- until we want to work min/max limits for those items back into the process as I get things smoothed out a bit,
- and not have any exercise adjust those amounts.
