“Refried” beans from the crockpot. Simple, only a few ingredients, satisfying, freezes well. I use half black beans and half pintos. Husband not a jalapeño fan so I use a can of green chilis.
Suggest going light on the salt til you’ve made it.
Drain before mashing, and save the liquid. You’ll probably need to add some back. This thickens quickly as it cools.

I also sometimes just stick chicken breast or pork loin in with bbq sauce. Two ingredients. Can’t get any easier.
Roast with broth, quartered potatoes, baby carrots sliced celery, sometimes will add a can of diced
Tomatoes or squeeze of tomato paste and either toasted onion seasoning or herbes de Provence.
Crockpots are wildly simply, and tenderize the worst, toughest cuts.1 -
Pot Roast
Prep time: 5-10 minutes, plus cook time (see below)
Ingredients:
16-32oz rump roast (pork or beef…this is one time I do NOT go extra-lean, as the higher fat content melts and keeps the meat from drying out)
1 cup sliced carrots
1 cup sliced red or gold potatoes
1/2 cup diced onion
1/4 cup water
1 pouch of powdered onion-soup mixDirections:
Add meat to pot, sprinkle soup mix across. Pour in remaining ingredients, add lid to pot. Set on low for 2-4 hours. (Individual pots vary; the first time, check on the shorter side by pulling out the meat to a cutting board and slicing in half.)1 -

Salsa Chicken
Boneless, skinless chicken (either breast or thighs work)
Salsa (whatever kind you prefer)
Diced tomatoes with chilies
Canned corn (optional)
Canned black beans (optional)
If I don't use the corn and beans, I put it over rice.

taco kit.
Stick a pound or two of chicken in the crock pot, cover with the salsa and taco powder from the kit, cook on low all day, shred, and serve in the heated shells.
Doesn’t get any easier, soooo tasty, high protein and low cal!
leftover meat is great over greens for lunch the next day.1
