Chopped Picklewich Bowl - 350 Calories!

A few months back, I heard about the new picklewich at Jimmy John's (which, essentially, is a sandwich that uses a dill pickle as a bread substitute). As luck would have it, our local Jimmy John's wasn't participating in the promotion, so I decided to make my own. My recreation was good, but using two pickle halves in place of the bread made all of the meat, cheese, and toppings quite slippery and VERY MESSY. So, I thought to myself...why not throw it all together and chop it up so it's forkable? Like a chopped salad?

I present to you...the chopped picklewich bowl. Was it my idea? No. Did I perfect it? Not really. Is it delicious? Yes! So, so good (if you love dill, of course)!

The bowl pictured (my dinner last night) included a handful of green leaf lettuce, a few slivered onions, a chopped jumbo dill pickle half (we prefer Clausen), 4-oz. deli shaved chicken breast, 1/4 cup of shredded provolone, and a dollop of homemade dill dressing (1 tbsp. of light mayo, a drop or two of yellow mustard, 1/2 tsp. dill, a splash of lemon juice, salt, and pepper). 350 calories as pictured!
