Current weight 251. 8 lbs remaining are the toughest!

Loosing weight at the same time trying to gain muscle. Sounds possible. I also should mention I’m seventy five. I did well til I hit a plateau. Tried eating Keto and went with a Keto type app. Problem with not flexible for my lifestyle. Realized that I needed to see if something else was workable. I have been using MyFitnessPal for almost two months. I have made better progress eating more, including carbs and trying to eat more protein. And there is my problem. Without going to protein bars/drinks/powders or tofu’s, how do I get protein up without raising my carbs too much?
