Well, you should be discussing this with professionals that have experience. Of course there's many reasons why hypoglycemia happen and why it's important to consult a professional, simply because it can put a person in a life threatening situation where medical care is essential.

For example you could have early signs of hyperinsulinemia where too much insulin removes too much blood glucose and drops to those low levels and where a person's A1C can appear quite normal. This is imo what Doctors should be checking along with A1C because hyperinsulinemia is a precursor to insulin resistance, prediabetes and diabetes which may not manifest itself until years down the road.

This situation where a person develops hyperinsulinemia and as it relates to diet is carbohydrate and fat driven and the type that are mostly associated with UPF's which basically describes the SAD diet. Some people can eat junk food and have pretty good health but if a person has become overweight or obese and have signs of other metabolic disorders/dysfunction then hyperinsulinemia is basically the canary in the coal mine. In this context reducing UPF"s and consuming more whole natural foods and also reducing the total amount of carbs in the diet will tend to translate in a more regulated blood glucose responses that don't fall into those very low numbers from the overproduction of insulin from a meal.

Like I said there's actually many other reasons not associated with diet but I thought I'd answer your question in that context.
