Tomatillo Salsa

I went over a lot of recipes and read reviews and combined a lot of the different things and came up with this recipe. It is really healthy and just as tasty. Use as dip, topping, or marinade.

1.25 lbs (567g) tomatillos, peeled and rinsed
3 jalapeños, halved lengthwIse, seeds removed (Leave 1 half with seeds in for heat)
1/2 cup chopped onion
4 cloves garlic
1/2 tsp sea salt or pink salt
1 tsp ground cumin
1 tsp dried oregano
2 Tbsp white vinegar
3 limes (heat all 3 in microwave 15 sec to help release juice. They should be slightly warm)
3 cups cilantro

Preheat oven to 350* F.
Place whole tomatillos and pepper halves on a baking sheet and bake for 30 minutes. Let cool for 10 minutes.
Add all ingredients in a blender (in 2 batches) or all in a food processor and pulse until combined.
Refrigerate all leftovers.
