I was wondering if I could switch my meals around on the meal plan program during the week if needed

I admit I haven't used one of the MFP plans, not a criticism of those, just not my jam.
But if your question is whether your weight/nutrition results will change if you swap which days you eat which meals, and you still get sensible calories/nutrients over the course of a week, that's not going to make a material difference in your weight loss or health results.
