Embarking on week 3 of keto and feel at a stalemate, trying to think of new foods, recipes, snacks. Is there anyone who is further along in this and have some good ideas? I don't want to get burned out on the same old foods every day. TIA!

    Yeah I've been on a ketogenic diet for over a decade. Can I ask what convinced you to embark on this alternative approach, just curious.

    Anyway I'm a chef and find it pretty easy to put foods that qualify a pretty easy process but I understand that a lot of people don't have a lot of knowledge regarding this diet so I'll link you to where you'll find all the foods, combinations and cooking styles to last you for years.

    Here's one and easy peasy.

    Pan-seared cod in salsa with queso fresco

    Ingredients

    • 12 oz. cod, boneless fillets
    • 1 tsp ground cumin
    • 1 tsp chili powder
    • ¼ tsp salt
    • 1 tbsp olive oil
    • ½ cup chunky salsa
    • ¼ cup sour cream
    • ½ (3½ oz.) avocado
    • 2 oz. queso fresco or cheddar cheese

    Instructions

    1. Sprinkle the chili powder, cumin, and salt over both sides of the fish fillets.
    2. Heat the oil in a skillet over high heat.
    3. When the oil is hot, add the fish and sear for 1.5 minutes on each side. Reduce heat to low and pour the prepared salsa around the filets.
    4. Simmer the fish in the salsa for 3-4 minutes. Plate the fish, and pour the salsa evenly over the fish.
    5. Serve with sour cream, avocado, and crumbled queso fresco. Garnish with a wedge of lime and chopped fresh cilantro if desired.

    I’ve been low carb or keto for years. Keto helped me kickstart my weight loss.
    some items that are staples for me:

    Salmon, bluefish, tuna, sea bass

    Bison, venison, duck, chicken, turkey

    Eggs, avocado, all greens, berries, broccoli, cauliflower, asparagus, mushrooms.

    I do collagen shakes, flax or chia pudding.

    Thank you! There are quite a few on the list that I haven't tried, I will be sure to add these to my grocery list 😀 Will also have to look up what flax or chia pudding is..this is new to me!

    I had tried quite a few variations of "diet" with no avail, and left feeling deflated from so much effort. I had heard good things about keto and so I thought I'd give it a shot.

    The recipe you shared sounds delicious and easy! I will have to try this one - sounds so full of flavor and not a huge time expense to make.

    Thank you for sharing…and knowing this eating plan is doable long term, I am that much more excited to continue forward!
