Looking for some new dinner recipes that are easy but low in fat any suggestions stuck in a rut with the same meals

    May I suggest (mansplainโ€” sorry) that you go for more healthy fats rather than carbs? Be inspired by the Mediterranean diet and eat lots of olive oil and feta cheese! I'm happy if the fat calories are up to 50% of my dinner.

    I feel like best meals while cutting are things like a salad with a great dressing (including olive oilโ€” so many variations [*]) and a tender piece of chicken or fish on it with feta or other cheese.

    We do several variations:

    Salad could be just tomatoes. Or, it could be a steamed vegetable rather than a salad, such as chopped broccoli or cauliflower (still with dressing).

    The protein can be chicken, pork loin, lean beef, salmon, tilapia (buy frozen "loins" [**]), shrimp (buy frozen and thaw out just the number you need [***]). Here's a radical take, you can even use bacon! A typical strip of bacon only has 43kcals. You can put 4-5 strips of bacon on a salad and still keep the meal under 500kcals. ๐Ÿคฏ (I like the low sodium bacon better.)

    If you want a bit of carbs with your meal, you can add a piece of toast or bread with butter. Or, you can have some fruit for dessert.

    [*] Our house dressing includes olive oil, white balsamic vin, Dijon mustard, crushed fresh garlic, herbs de prov, black ground pepper. Search "French vinaigrette." It's fabulous, and I put it on everything!

    [**] "Tilapia Loins" are a great affordable way to eat fish, IMHO. The bad rap that Tilapia got some time ago wasn't deserved.

    [***] We weren't eating much shrimp until I realized that you can buy a frozen bag at most supermarkets sometimes on sale. If you take out say 6 shrimp (~120kcals), you can put them in a bamboo steamer and they're ready in short order. Fantastic on salad greens with a Mediterranean salad dressing.

    Do you like seafood? Shrimp and scallops go great with each other. Cooked in butter or virgin olive oil. Or garlic butter. I enjoy garlic butter. However virgin olive oil is healthier. In separate pan. Place your butter or oil. Mid to low temp

    Scallops and shrimp. Make sure shrimp is naked aka peeled and veined. No tale, rinse in cold water. Dry with paper towel. Put in pan with butter or olive oil. I add onions and garlic

    In other pan possibly a bigger pan add virgin olive oil. Turmnic, curry, ginger, spinach. cauliflower rice. You might want to start this first. Cauliflower rice possibly frozen unless you can make your own. Depending on whose eating meal with you. i do a half of bag for my self of Cauliflower rice. When cauliflower is soft add some broccoli and mini peppers chopped. You can also grab a egg. Scrambled it or push a side cauliflower rice crack in pan. Scramble it in pan. Than mixing with cauliflower rice and veggies.

    Shrimp and scallops don't take to long to cook. If over cooked it will be a rubber taste. Cook 5 to 10 minutes. Than mix with cauliflower and vegetables.

    I also like doing this with a pesto sauce with pasta. If you don't like seafood you can add chicken or turkey.

    I usually don't buy red meat. Unless it's dinner with parents. Or a BBQ with burgers steak and ribs

    Get a rotisserie chicken, saute some sweet onion and bell peppers, serve 1 meal with rice or potatoes and vegs, a 2nd meal of street tacos and 3rd meal use the picking on a chopped/chef salad or add into soup, stew or chili.
