carbs aren’t necessarily a bad thing. It’s fuel for your body. Your body will sequester from other areas for energy. Like muscle for example

I don't avoid carbs: I think it's a good thing to eat plenty of varied, colorful veggies and fruits, no-sugar-added dairy foods, and some whole grains. All of those contain carbs.

That's what suits me. I lost weight fine, obese to healthy weight in under a year; I've maintained a healthy weight for 9+ years since, still eating those carbs and - since I have more calories available in maintenance - the occasional sweet treat food. My blood test results and other health markers are solidly normal, my fitness and athletic performance are good, everything's fine.

Some people need to manage carbs carefully, because of health conditions like diabetes or insulin resistance. Even they may not need to completely eliminate carbs.

Though it's not universally true, some people find it easier to manage their appetite when eating relatively lower carb. That's fine.

But it's not true that everyone needs to avoid carbs.

I mean, if you are really set on avoiding carbs, you just… avoid carbs?

Cut bread, rice, pasta, potatoes, sugar, legumes, grains and focus on proteins (meats, eggs, tofu), non-starchy veg and fats (nuts, cheese, cream).

I eat pretty low carb day to day because I can take or leave bread, pasta rice and potatoes so my meals tend to be protein and lots of non-starchy veg, snacks are cottage cheese, tuna, peanut butter, boiled eggs, lean salami, veggies and dip etc etc
