Pizza Chicken

If you’re trying to cut carbs and miss pizza but don’t want to buy processed low carb crust alternatives, pizza chicken is the answer. Chicken breast either pounded thin or cut thin - you can poach them or sautee in a nonstick pan lightly coated in olive oil, season them to your taste (I do simple salt, pepper, parsley, and garlic. Once cooked just through and rested, top with pizza sauce (I make my own from canned tomatoes, a couple of spoonfuls of Frontier organic pizza seasoning and garlic powder, simmer on low until tomatoes are broken down and sauce is thickened.) You can use a good quality marinara like RAOS if you don’t want to make the sauce yourself. Top lightly with mozzarella or cheese of your choice (whatever quantity is within your desired macros per serving) and your favorite toppings. Pop them in the broiler on a lined baking sheet for a few minutes just until the cheese melts or browns to your liking. The base recipe is a high protein, high vitamin C, low fat alternative to pizza. And it’s super filling with a side salad or steamed veg. Instead of crushing half a pizza like I used to, I can eat one serving (one topped chicken breast) and feel full, satisfied, and like I just ate pizza without the carb crash. My whole family loves it.

    that’s a great idea! I’m going to steal it.

    But my lazy man’s way of making pizza is to squeeze some of that concentrated tomato paste in a tube, spread evenly, and sprinkle with pizza seasoning (we use the Victoria Taylor).

    Once in a while when we find it, we also make pizza on lavash flatbread. Low cal, and feels like a treat.

    This sounds like something I'm looking for could you explain a little further how you process this meat?

    Sounds like maybe what I do in making a salmon Patty but I usually have to add an egg or cheese for it to hold together. You must know I'm not a cook I just like food thanks for sharing your idea.
