My first attempt at a Mediterranean Inspired Dish

I use to be a REALLY picky eater when I look back at it. My diet has changed soooo drastically in the last 6-7 years. I’ve learned how to cook (I couldn’t boil water without burning down the house), I’ve lost some weight, I’ve focused on my health, I’ve made some really big changes; some came naturally over time, others were immediate sudden changes.

So, I’m not like a chef or anything, but boy do I enjoy my own cooking. I’ve really surprised myself because I’ve been making some really tasty meals modified to fit a lower calorie, low sodium diet.

Today I craved Mediterranean food so I made a dish that I imagined it as close as I could get. Let me know what you think.

1x Chicken Leg Quarter
1/2 Cup Basmati Rice
Mediterranean Style Salad
And Homemade Tzatziki Sauce

It was sooo easy to cook and make everything, the chicken was well seasoned and placed on a baking sheet, over some parchment paper. Cooked at 400°F for an hour. It came out super juicy, well seasoned, and crispy!


The cucumber salad contained diced cucumbers, tomatoes, red onions, mint, lemon juice, salt and a light drizzle of olive oil


The Tzatziki sauce, super easy, cucumber, greek yogurt, mint, dill, lemon juice, olive oil, and salt.


The rice was a challenge for me, but basically Basmati Rice, Turmeric, Onion, Salt, and Garlic. It came out ok, next time I’ll try experimenting with adding some of the chicken drippings.

I WAS going to make some pita bread, however I ran out of time and I was tired by the end of it, but next time I’ll attempt it. All in all, the calories were pretty good. I calculated around 900+
Calories for the meal, boy was I stuffed! I’m really proud of myself because I would have NEVER thought about cooking something like this years ago, I am loving the man I’ve become and look forward to the future.

    It's not common enough that people embrace cooking using primarily whole natural ingredients and realize a paradigm shift in their food preferences, not common at all, so carry on doing that. You've beaten the system. Good for you, bravo!
