Virtually Fat Free Cream Sauce

I found this recipe last night and just had to share it with you guys! This sauce turned out SO good. I sautéd some onion and mushrooms in some non-stick cooking spray. Then used fresh cherry tomatoes, added some garlic powder and cayenne pepper. At the end added just a little bit of grated parmesan cheese. The entire family loved it. We put it over pasta with some grilled shrimp and chicken. Can't wait to have the leftovers tonight!

This is a great base to any kind of cream sauce. I could see adding different veggies, etc depending on what you have in the fridge.

Light Tomato Cream Sauce

2 cups of skim milk
6 tablespoons of flour
15 cherry tomatoes diced
garlic powder (to taste)
salt and pepper (to taste)
cayenne pepper (to taste)
1 tablespoon grated parmesan cheese


Combine flour with enough cold water to form a paste; whisk until smooth and lump-free.

Heat milk until almost boiling.

Whisk in flour paste, garlic powder, cayenne, salt, and pepper. Add chopped tomatoes.

Continue whisking until sauce thickens, stir in parmesan cheese.

Serve over pasta and enjoy!
