What to do with all the leftovers??

My meal plan calls for small amounts here and there of produce and fruit. For instance, approx. 1 1/2lbs of cantaloupe. The smallest Cantaloupe at my local grocer weighed over 3lbs. Plan also called for 11oz of Watermelon. That leaves me with a ton of leftover watermelon. Not interested in freezing foods. Guess I’ll need to substitute those items??

    what’s wrong with cubing them, refridgerating them in a bowl with Saran Wrap, and eating them for the next few days?

    If it were me, I’d cut somewhere else to enjoy more of them. Even if I just cut a pretzel rod (3=110 calories) it’s totally doable.

    I could eat watermelon 24:7. It’s the cutting of it that I absolutely loath doing. Husband always promises he’ll do it for me but that has never. once. happened, lol. 😢

    and PS- don’t forget, that three pounds includes a very heavy rind. It’s not all edible. You only count the edible bits.

    Well and a whole cantaloupe is what, nine calories??? Just kidding of course, but melons are super low cal - why wouldn't you eat them? Really high in Potassium, and good for the water content!

    Seriously though, a Large Cantaloupe is fewer than 300 calories for the whole thing. The Vitamin A is very high, too, like 20,000 IU in a whole cantaloupe. Really good for you!

    Eat the same several times in a row? Use leftover fruit and veg as snacks? Freeze for later if the type allows for it?

    This is exactly what I do. If a plan has a given meal one day, I'll eat that meal for a couple days instead of just the one day the plan calls for. It makes the plan last longer, but that's ok.

    Exactly. I also often freeze a portion and take it out of the freezer a week later again. Provided the type of food is suitable for it. Pastasauce is overall quite good for freezing. Just cook new pasta and add cheese on top. Same with curries and the likes. A pot of rice is quickly cooked.

    Eat them or freeze for smoothies if I'm not going to get to the fruit in time.
