IRISH POTATO CAKES
Makes 12 cakes, can easily be cut in half to make 6, but they're great for later lunchbox snacking or as a meal by themselves. I don't know what the price works out as in your local supermarket, but this batch cost me about €3.
900g large potatoes
1 bunch scallions or spring onions (these can be substituted for any other vegetable that makes sense. Carrots, broccolli, caulflour and peas can all be used to bulk out the recipe while reducing calories per portion, but remember to cook them first!)
100g Plain flour
2 Eggs
1. Peel and boil the potatoes. Drain off extra water and mash.
2. Whisk eggs and chop scallions finely.
3. Combine eggs, scallions and potatoes in a mixing bowl. Use a spatula to gradually fold in flour.
4. Dusting the surface you are using with flour, take your mixture and form into twelve balls. The mixture may be too runny to form into balls, but that's fine. Divide into twelve portions and using the flour on your hands, form a ball shape with your hands.
5. With a frying pan on medium heat and low calorie spray warmed on it, drop balls onto the pan. When they begin to brown on one side, flip them over and press them down to form patties.
6. When they are browned on both sides, they're done!
These also make tasty leftovers. Take them out of the fridge and cook on 200C (390F) for fifteen minutes, turning half way through. They can also be eaten cold, but be warned, they don't freeze well.
