Nothing is working. I need input.

Long story short, I have PCOS, autoimmune issues, as well as some undiagnosed GI issues; they cannot figure out why I have the GI symptoms. For the past 2 years I have struggling with very slow weight gain, in spite of truly watching my diet and being active. I walk an average of 9-11k steps per day, and have been working out twice per week since January. When I do "splurge" we are talking 1500 calories or lower, usually 1400 or lower. 99% of the time home made food. Occasional snacks such as granola bars or dessert(but I am picky or it hurts me, so usually not a big eater of that stuff.). Doctors, understandably, have a hard time believing that I am not over eating, since I am struggling with my weight so much. I gained about 10lbs while having SIBO and H.Pylori (now treated) just so you have an idea of what I am up against; I couldn't eat much without throwing up, being bloated or having diarrhea, and still gained weight. I suspect I am perimenopausal.
Because of my digestive issues, the fruits and vegetables that I can consume are quite limited. I also do not digest pasta, most desserts make me sick, and therefore most my meals will consist of a protein, a small portion of carb (most often rice) that I can digest, as well as some vegetable or salad.
All of this to ask: Anyone out there can relate to any of this? I tried low carb, no carb, no sugar, keto, intermittent fasting…but over time, less and less I see any result at all. And I cannot try low protein…as I mentioned, I am very limited on the vegetables that I can consume. Drs are still trying to figure that one out. And added carbs make me balloon.
Just asking for input. Any input.

Have you been tested for celiac? Thyroid issues?

Do some research on Carnivore, you situation is pretty much the classic story where a very high percentage find total relief. 😊

I think you are focussing on the wrong things as far as weight loss is concerned.
Bottom line is just the calorie amount -not whether it is IF, Keto ,etc etc
Given you have seen doctors galore, I am assuming you have been tested for thyroid issues etc
Yes you are limited in what foods yo u can eat - but weight loss doesn't depend on what sorts of food you eat, just o n the calorie amount (of course for other reasons, one wants to eat a reasonably nutritious and balanced diet but that is an aside to losing weight)
How long have you been using MFP to count your calories?
Perhaps if you open your diary, experienced posters could offer some suggestions

I have a sister who has Hashimoto's disease which causes hypothyroidism. I can't recall what came first but she had a leaky gut that also worsened her PCOS that then made her insulin resistant. She gained weight even while barely eating (she did not have an appetite because of her GI issues from hypothyroidism). It took her a lot of experimenting but what made her condition more manageable, on top of medication, was a combination of:
- healthy fats (olive oil, avocados)
- improving gut microbiome with prebiotic food (asparagus, leeks) and probiotics
- she is mostly on pescatarian diet, so a lot of access to omega-3s
But yes if it's weight loss that you are, the key is to cut your calories, but then there are other factors that could increase your cravings. How is your sleep? I've recently went on a challenge to decrease my dopamine which led to better sleep and better control of my cravings.
