How long have you been doing these things without losing weight?
Newer exercise can cause water retention that masks fat loss on the scale.
What's your current height and weight? Are you male or female? How many calories are you eating daily? Any cheat or treat meals (or oopsies) that aren't included in calories logged?
With a little more info, we could give you better feedback.
As context, we aren't that different: I'm 69F, rowing on water 4 days a week (sometimes twice per day), stationary biking 15+ miles once or twice a week, in year 9+ of maintaining a healthy weight after losing around 50 pounds.
This process can work, but there often needs to be some analysis and problem solving along the way.
Best wishes!

The macros aren't nearly as important as your calories, but you say you can't eat all your calories? Unless you just started this less than a month ago, that's probably not going to be an ongoing problem. You'll need to eat to fuel your life, and your body will start demanding more food if you're undereating. Don't ignore those signals.
How accurate is your food logging? That's often where the problem lies.
