fast n easy: cut chicken into small cubes or slivers, brown in preheated pan with no oil.
(Best way to do this is to cook longer than you think it needs, to brown and crust well and then flip over the pieces and do same. Too much flipping or stirring will make it watery and yucky.)
Remove from pan, add a bag of frozen vegetable fried rice or fresh stir fry veggies or “chopped” (Taylor Farms has awesome versions of stir fry and chopped salads) cook without oil til tender crisp or til rice has some crunch. Add a whipped egg to one side if you like eggs in your stir fry, fold into rice once cooked.Add back chicken, serve with soy sauce or a little honey /ginger balsamic. Some kits even come with a decent low cal sauce.
we serve on top of cauliflower rice to make it go even further for hardly any extra calories.
or….. my latest obsession, dice and brown that cubed chicken, add a little Honey Buffalo sauce, stir til mixed, and serve either on top of greens and tomatoes, or in a tortilla wrap. Add some crumbled blue cheese if desired.Pound a chicken breast flat, brown in a preheated dry pan, and serve between slices of toast with a slice of cheese.
All are very low cal and very high protein.

I really like to cut chicken breasts in half lengthwise so they’re not too thick.
i poke the all over with a fork.
The McCormicks Mesquite dry seasoning is one of my favorites. I replace the oul with water and it’s delicious!!!I’ve also tried the Buffalo chicken and Caribbean Jerk marinades.
All are great!Serve over rice cauliflower (as rice) and you have a super low cal/high protein yummy dinner!

The easiest thing I do with chicken:
I marinate skinless boneless chicken breasts overnight in Italian dressing (in pour out the oil that settles on the top before using) and either grill, air fry, or bake. I then use them as is with a vegetable and healthy grain, or over salad, or in quesadillas with low carb tortillas, etc. The possibilities are endless and they are good for lunch or dinner.

For a whole roast chicken or store bought rotisserie chicken.
Day 1: Roast chicken. Concentrate on eating bony back, wings and drumsticks as meatiers parts are easier to deal with as leftovers.Day 2: Vaguely Mexican chicken salad. Mix chopped chicken with chopped avocado, a jar of store bought salsa and a handful of coriander. Have in a tortilla or flatbread.
Day3: Avgolemono soup. Simmer chicken stock, a handful of rice, some chopped chicken and lemon juice until rice is tender. Turn heat to low, beat one or two eggs with a ladleful of soup to temper and then stir into the pan, stirring and turn off the heat. Serve with a greek salad.

marinate, grill, serve with feta, diced sun-dried tomatoes and a squeeze of lemon juice.Lovely!
