What happens i don’t eat enough during the day?

As long as you eat enough in any given period you're fine. If you don't you might get sick, lose your hair, lose masses of muscle. If you're trying to lose weight then eat enough otherwise you'll give up in frustration in a few days, binge and think it's not working.

If your questions isn't "is it bad to undereat one day" (answer: probably not) or "is it bad to undereat routinely" (answer: probably yes), but is about timing your eating during the day, there are mixed opinions around here.
I'm in camp "eat at whatever time of day works best for you". There may be some pros and cons of particular timings, but if the goal is body weight management, those are relatively small factors compared with compliance with a reasonable overall eating routine (on average over a few days). A personally sustainable routine is vital, and very individual.
For sure, some things common in the blogosphere, like the claim that anything you eat after X o'clock always turns into body fat, regardless of calorie intake in the big picture . . . lots of those are totally false.

From my experience, it usually backfires at night. I end up feeling hungry and more likely to overeat the stuff I normally try to avoid. Now I try to make sure I get enough protein and fat earlier in the day.

do you mean you eat a tiny breakfast and lunch and then have a large dinner at night?
or do you mean barely eating for 24 hours?0
