Sunflower seed recipes please

my new favourite is sunflower seeds. Does anyone have any good recipes they are or could be incorporated into

    Since pine nuts got so expensive in recent years, I have been replacing them with sunflower seeds. Pesto and caponata are the recipes that come to mind.

    This may be not what you're looking for, but I've used the shelled sunflower seeds as an ingredient in sweet potato or squash soups, some of them blended in the soup with my blender, some sprinkled on top of my serving. Toasted ones are especially nice.

    For sure, I also put those or shelled pumpkin seeds on salads, as crunchy toppings on baked casserole-type dishes, even in sandwiches.

    I love an omelet, filled with a small amount of cheddar cheese and sunflower seeds….if I’m feeling especially hungry (or for dinner) I add mushrooms, chives, or any leftover veggies I might have.

    I also love sunflower seeds on salad.

    I have occ. been exploring subbing sunbutter for peanut butter in a few dishes. Mostly those with asian-inspired peanut sauces. The results have been … ok …, while the flavor is good, sunbutter is thinner than peanut so that has been a consideration. i use the sunbutter which needs continual remixing, both creamy and chunky versions. There is a sunbutter spread which my daughter uses (in Canada) that incorporates a carby binder to thicken and firm it up (cant remember off hand if it is HFCS or similar), but I dont like the taste as much as my usual stuff. I also sometimes mix it into plain yogurt (standard and greek), so i guess it'll work ok in smoothies and shakes.
