why doesn’t this app pick up the the vitamins in kale?

I know kale has a lot of vitamin A, but it never shows in this app

Because the database is largely user added, and added from available information (or the information that the user who entered it cared about).
Vitamin A is not required to be included on food labels, and few people would go looking for the information to enter it into the voluntary field.
This is true for all entries in the database, really. You can't trust them in terms of vitamins or micronutrients unless you verify the information yourself, because by and large, they've just not been entered.

There are entries that have the Vitamin A included, such as the one below. While the default serving size is in cups, there are weights and other options in the serving size drop-down.
