why is it when I drop weight and start hitting my lowest weight that no matter what I do for the next couple weeks my body will go up 2-3 pounds and hold there?

Probably some water retention effect, unless there's evident constipation in the picture, assuming your activity level and calorie intake remain close to consistent. Some people find that a few days eating at maintenance calories will trigger some water retention release, but that's not a sure thing. Seems like weight management always requires patience, but IME perseverance tends to be rewarded eventually.

usually water retention. If no change after a month then more than likely its a calorie issue
