Quick Protein Suggestion to Tweak Recipe

I am (believe it or not) tired of chocolate peanut butter pancakes (with hagel and chocolate peanut butter frosting), and want to make some plain vanilla ones, and top them with sliced fruit and jam for a change of pace.

Removing the generous amount of peanut butter powder in the batter and also in the frosting is cutting the protein down several grams per serving.

What creative ingredient can I add to bop it back up again?

I already include cottage cheese, Kodiak protein pancake mix, Naked whey protein, skim milk, and liquid egg whites.


removing PBP and cocoa powder means I have maybe 250-300 calories to play with in the recipe.


I bake them on large sheet cake pans and make 8 servings at a time, which I refrigerate and freeze (they reheat very well in the microwave).


I was wondering if I could mash some white beans of some kind, but not sure I want to risk ruining two giant pans if that’s gross.

I could make some labneh and use that as a “cream cheese” spread in lieu of jam? Or with the jam and fruit, since the calories are already quite a bit less?

I’m not a seed user. Has anyone baked with chia, hemp hearts etc? any protein there?
