how do I know what the serving size of a recipe is?

I'm not sure I understand the question.
Do you mean a recipe in the MFP meal planning function? If that's it, I don't know, because I don't use that.
If you mean a recipe on the web, they usually indicate a number of servings. If you want precision, you can make the recipe, weigh the finished food in total, divide by that number of servings (or however many servings you want it to be), then you'll know how many grams (or other measurement unit) are in one serving.
If you mean any recipe you put in the MFP recipe builder, I usually weigh the finished dish, and use the total number of grams of food as the number of servings on the recipe. (MFP gives a warning message about giant numbers of servings, but will let me add it that way.) Then, when I log the food, I take out however much I want to eat that time, weigh my portion in grams, and log it as with the number of grams as number of servings in my diary.
If you're asking how much of a recipe you should eat at one time . . . that's up to you.
