GF Granola
Dry Ingredients:
3 cups certified gluten-free oats
1 cup oat bran
1/2 cup flax seeds (ground)
1/2 cup sunflower seeds
1 cup sliced almonds
1 cup walnuts, chopped
1/2 cup sweetened coconut
Wet Ingredients:
1/4 cup maple syrup
1/4 cup honey
1/4 cup brown sugar
1 T vanilla
1 T cinnamon
4 T coconut oil
3 T peanut butter
1 cup craisins (dried cranberries)
1/2 cup raisins
DIRECTIONS:
Combine all the dry ingredients into a large bowl. In a small saucepan, combine the wet ingredients. Bring the wet mixture just to a boil and then add it to the dry ingredients and stir until the oat mixture is evenly moistened. Press the granola in a shallow pan lined with parchment paper or foil. Bake @ 300 for 30 minutes, stirring once.
Let it cool, stirring occasionally. Once cooled, add the craisins and raisins and stir well. Store in a sealed container in the refrigerator.
