I'm looking for a crowd pleasing healthy quinoa salad recipe to bring to a work pot luck.

This is my favorite quinoa salad recipe...if you can't get all the veggies in your area, then substitute for something similar...really its all the colors that make this salad so appealing, but the dressing is hands down a winner. The ratio is equal parts chopped veggies and cooked quinoa...make the dressing, then add as much or as little as you like...the quinoa will absorb a lot, so try to be sparing, and set a carafe of the extra dressing on the side, for those that want more.
1/2 c chopped red onion
1/2 c chopped radish
1/2 c chopped baby beets
1/2 c chopped roasted and chilled sweet potato
1/2 c chopped yellow cauliflower
1/2 c chopped broccoli
1/2 c shredded baby spinach (roll like a cigar and slice into ribbons)
1/2 c pea shoots
4 c cooked quinoa
toss it altogether
Whisk together:
1/2 c rice wine vinegar
3T coconut oil
2T agave
1T srirachi sauce
1T miso paste
Pour about half over the salad and toss til nicely coated. Let it chill overnight and take a look...if it looks too dry, add a bit more dressing and serve the rest on the side.0 -

This may sound strange, but I LOVE it. I don't include quantities...so just eyeball it to your taste.
Quinoa (i cook it in chicken stock for extra flavour)
Pickles (garlic/dill)
Olives (i use green)
Feta Cheese
Red Peppers (for a little crunch and colour)
Grape Tomatoes (cut in half...I usually omit)
Cut everything small and toss it all in a bowl.
*you can also throw in some spinach to make it more "salad-y"

I cook with quinoa all the time!
My favorite way to cook it is as the packet suggests BUT adding spices to the water it's being cooked in like morrocan spice or cajun or even just chicken stock!
Once I've cooked the quinoa, I love stirring through baby spinach, pumpkin and sunflower seeds, chickpeas, roast pumpkin and zucchini, balsamic cherry tomatoes (cherry tomatoes baked at a high temperature for 10 minutes, drizzled with balsamic) and sometimes some craisins or dried apricots. I cook it every time I have a dinner party and it's always all gone!0
