Why is my weight fluctuating on a low/no carb diet ?

I would expect it to fluctuate more on this type of diet, as opposed to less, than on a more traditional macro balance diet.
In addition to all the normal reasons why weight would fluctuate you're adding variable carb intake and associated additional potential extra retention when adjusting glycogen reserves.

Because that is what weight does. As PAV888 said, if you add extra carbs, you will gain because storing glycogen will require water.
When it comes to it, you really haven't given enough information for a more specific answer.

For the same reasons that weight fluctuates for people who aren't on a low carb diet. Yes, your body may drop a lot of water weight at first, but once it adjusts, you still have salt, food waste, hormones, inflammation that causes muscles to retain water, etc. A lot of people on very low carb diets get quite constipated, which can have a big effect.

Weight fluctuation is normal and due to a multitude of things, including water bound to glycogen, amount of food waste in your intestines, clothes you wear if not naked, days with more water weight due to hormonal cycle, moving less and sitting more, being a slightly sick, or masses of other reasons. It's normal. I'd worry if I wasn't dead if there were no fluctuations.
