Introduction
Hi, I have been using MyFitnessPal to help me deal with diabetes. I was wandering if there is anyone that would have tips on how to keep things easy, especially when I'm off work when it's easier to overeat and raise your glucose.

Hello, and welcome!
I guess I'd suggest giving some thought about why it's easier to overeat when you're off work.
If it's because there are more tempting but unhealthful foods at home, consider not bringing them into the house. If your family/housemates need them, a thing some people do is ask the others to keep those things in specific designated cupboards or in a specific part of the refrigerator/freezer, then work on themselves to psychologically define those foods as "not my food" so off limits.
If it's that there's free time at home that past habit has been to fill with snacking, consider resuming an old distracting/absorbing hobby or adding a new one. Bonus points if it's something that either requires clean hands (sketching, playing a musical instrument, needlework, etc.) or creates dirty ones (gardening, carpentry, painting, etc.).
It's usually easier to break an undesired habit by replacing it with a new, more positive one, rather than trying to quit cold turkey.
For example, if there's a snacking habit, replace it with a habit of stretching, taking a walk around the block, spending 15 minutes tidying up some closet shelf/drawer, . . . whatever. It's probably best not to replace it with some other consumable, but if that's necessary, consider some zero calorie thing like a hot herbal tea. (Some people find hydration or hot beverages dampen cravings, too.)
Someon here once called nutrition improvement and weight loss as a long series of problem-solving opportunities. I think this was the kind of thing they were talking about.
The above ideas may not address your personal "why I overeat when off work", but I hope they at least give you examples of the "find the why, brainstorm solutions, try them, keep going until you find a solution" kind of approach.
Best wishes!
