Zucchini pizza boat
1 zucchini
spicy chicken sausage
spinach
low fat mozzarella
Marinara sauce of choice (i used trader joes)
cut zucchini in half & scoop out the insides & cook with the chicken sausage & spinach on medium heat
when done cooking, add marinara sauce & mix together & scoop it into the zucchini & sprinkle cheese on top
bake at 350* for 25 minutes with foil covering it & the last 10minutes take foil off the top

I make something similar, maybe different fillings, and can also be made with green peppers and eggplants0

This actually sounds and looks good. Usually substitutes (like cauliflower everything or frozen mashed bananas disguised as an ice cream) are so crappy they shouldn't be called whatever it is they are supposed to be like.0

We've made this several times and it's so good! Even my kids all love it. In the interest of full disclosure though, my husband won't even try it. He's not a fan of zucchini and a fairly picky eater. He's coming along but I doubt this will ever win him over.0
