Diet adaptation

Hello everyone,
I changed my diet to a vegetarian diet about 3 years ago. Even after becoming vegetarian I didn't not eat very healthy until a few months ago. I noticed in the last two months, I have a hard time to eat certain type of food I used to eat. I have a hard time eating things that contains a lot of fat, like cheese, fast food, even pasta in general is getting hard to eat. I was wondering if anyone else had that when they started eating healthy.

I was vegan for two years in my early 20s, but since it turns out potato chips and Pepsi don't have any animal products, my diet wasn't all that healthy
I've recently gone vegan-ish again, but my motivations are primarily for health, and more specifically preventing the diabetes that runs in my family. The difference has produced a much different diet, and it really is much harder to eat unhealthy foods now. When you know better, you do better.
