Week 1 transition. Thoughts on food log.

I have been logging since Monday. Would like some opinions. What would you change? I am concerned I am eating too much. Am I? I have a good amount of weight to lose still. Prior to this week, my habits were real messed up. I would have some real low cal days (like 500), and then randomn higher days (like 2500). I am trying to get into the habit now of eating regularly, steadily, healthfully, and trying to find the sweet spot of not too much or too little and get my metabolism moving.
