I am feeling motivated to prepare and pre-package my (and my husband's) lunches for next week. I am spending a lot of time eat evening preparing dinner for the evening and lunch for the next day. I think being able to "grab and go" will help me stay on track during the week. But I need ideas. What are some of your favorite meals? Thanks in advance!

I have just looked into making good chili. It's easy to pack up and good alone or used with some multi-grain tortilla chips.
The last thing I tried was a fig, feta, spinach grilled cheese a little while ago and it was delicious!0 -
Make a Big pot of soup. I love chicken noodle I always have leftovers.
Fish doesnt take Long to prepare.
Turkey tacos are my fav.
Pasta
I eat pretty much whatever just watch my portions0 -
Grilled/broiled chicken or sirloin steak. Slice and bag for the next week. Great on salad, sandwich or a soft taco. I sometimes grill alot so I can divide and freeze.
Shredded chicken is great for a soft chicken taco.
At same time, add some veggies - zucchini, broccoli, peppers, and other vegetables. You can use these as sides or add to pasta for a light pasta salad.
Chicken salad or tuna salad.
Also, I will make something for dinner but make extra and freeze such as stuffed peppers (using brown rice). Take extras and put in foil pans for freezer. Viola ! Dinner in a couple week. Take out and put in oven.
I personally like to make up some type of soup. I enjoy a bowl of soup and sandwich at lunch.
I invested in a pressure cooker (30 buck on amazon). You can cook vegetables and meats up very quickly. It seems to infuse the flavoring in.
I'm a big fan of flat bread or pita bread. Flat bread pizza - layer thin sliced tomatoes, minced garlic, fresh basil, mushrooms, peppers, chicken and light on cheese. Yum. Trick to this is to first lightly toast the flat bread. It keeps it from getting soggy.
Just a few suggestions.0 -
quinoa stays for a while once prepared in the fridge, it's delicious if you cook it in broth instead of water. It's filling for a good, hearty/healthy side!0
