Not another post about gluten!

Got you! It is. But it's quick, promise. I went gluten free a month ago due to terrible GI issues. GF was accompanied by some meds from my Dr for IBS.
I'd been feeling a bit better, as I'd never noticed a particular problem with gluten before I started getting GI attacks a while ago. So I had a sandwich last night with only the bottom half of a roll. I was a bit queasy, but that's been my normal for the past two months. So I figured I'd have a Subway sandwich tonight (I'm a grad student...late nights on campus seriously limit options. Plus, after last night I thought I'd be okay). I didn't feel super sick until I had the sandwich tonight (just turkey and veggies).
Any idea how I can get so ill after this sandwich but not the one last night? o.O Is it just delayed (I know people with Celiacs who don't experience glutening until a couple days later)??
Suggestions (well, besides returning to GF...duh)?

no idea -- though I have heard that if you eliminate a certain type of food from your diet (meat, fruit, gluten...) for a period of time, when you reintroduce it you'll get sick because your body will stop producing the enzymes necessary to break down that food.0
