How would you like to have a curry that is only 326 calories a serving?Try my beef kofta - it is delicious!!
Ingredients:
Aldi Severn Vale - Premium Lean Steak Mince ( Typically Less Than 12% Fat), 500 g
Spices - Fennel seed, 2 tsp
Ginger root - Raw grated, 3 tsp
Generic - Cinammon, Ground, 1 tsp
Generic - Red Chilli Powder, 1 tsp
Spices - Turmeric, ground, 1 tsp
Spices - Curry powder, 2 tbsp
Aldi Cucina - Passatta, 1 container (500 gs ea.)
Brooklea (Aldi) - Light Fat Free Natural Yoghurt, 250 g
Fresh chopped coriander (or coriander leaf if preferred)
Method:
Place the beef, ginger, cinammon, chilli powder and turmeric in a bowl.
crush the fennel seeds and add them to the beef and spices.
Mix all the ingredients together using your hands until bound together.
Make small (walnut size) meatballs.
place the passata and curry powder into a pan, mix thoroughly and bring to the boil then immediately bring to a simmer.
Add the meatballs to the sauce and then cook for around 20 minutes.
Drizzle over the natural yoghurt to taste and sprinkle a small amount of chilli powder over the top and add the chopped coriander.
Serve with a portion of boiled rice.
I thought I would hate this as i can't stand fennel, but Oh my lord it is gorgeous - and only 326 calories!!
Let me know if you try it and what you think. Happy cooking.
