I like to dice a little of the top I cut off and onion, put in meat while cooking. Very yummy and filling!

We make something similar, but my wife prefers the other colored peppers. we use the following:

    6 peppers
    1 lb hamburger
    2 cups uncooked rice
hunts large can of zesty and spicy sauce
    1 cup diced onion

We had tried adding cheese to it before, but it was way too much. If you wanted to add it, would probably be 1 cup. Our recipe probably isn't as healthy as yours, but we weren't watching calories at that time , though this may give you some suggestions.
