Vegan/Macrobiotic diet. Trying to tone up! Advice/help :)

Hey everyone!
I'm vegan and Macrobiotic... anyone else?

I guess I am having an issue with how many calories I should be intaking?

I'm currently 5'7" 102lbs, age 24

My goal is to primarily tone up! I used to be on the go constantly at my old job (I was a chef), but now I am working a typical 7 to 6 monday through friday desk job. I'm having a hard time finding ways to get in a good, balanced amount of exercise.

After cooking dinner, me and my boyfriend go on 2 to 3 miles walks around our neighborhood and I try to lift (only 5lbs haha) weights and do strengthening exercises throughout the day. I also frequently go camping/hiking 2 to 3 times a week, but I never measure my distance... more fun that way when it doesn't seem like a chore haha

Basically, I've never had an issue with keeping on muscle/exercising/weight until I started this job.
Any advice or opinions would be greatly appreciated :)
