Black Bean Sandwich

Tried this for lunch today - it was yummy!!!

1 can (15 oz) black beans, drained, rinsed
1/3 cup Thick 'n Chunky salsa (I prefer Pace HOT)
1/4 teaspoon ground cumin or chili powder

Pumpernickle Bread -- toasted -- (you can use any type of bread - this is what I had on hand)
Plum (Roma) tomatoes, sliced
Lettuce leaves


1. In food processor or blender, cover and process beans, salsa and cumin until smooth.
2. Serve 1/2 cup bean mixture on 2 slices pumpernickle bread with sliced tomatoe's & lettuce.

Approximately 250 calories per sandwich

    Those are my kids... that's the picture we used for our Christmas cards this year :tongue:
