Awesome Beef Stew! :)

My mom made amazing beef stew when I was living at home. I decided to try my hand at it… but with less calorie-rich ingredients, of course. The result was awesome! I was working with mainly what we already had around the house, so there’s definitely some wiggle room (like a whole can of Rotel instead of the half). I included a calorie breakdown, too:

Keri’s Beef Stew!

2-lb lean stew beef (1600)
½-can whole kernel corn, drained (175)
½-can spicy Rotel (30)
~ 40 oz reduced sodium chicken broth (65)
2 packets onion soup mix (160)
2 cups water
1 small Granny Smith apple, sliced (75)
2 large celery stalks, chopped into crescents (20)
6 medium red potatoes, chopped into fairly large pieces (600)

Lightly brown beef in Worcestershire sauce until about halfway done. Combine with all other ingredients in crockpot. Simmer over low heat at least 5 hours. Enjoy!

Makes about 4 quarts at a total of 2735 calories. A 2-cup serving contains about 350 calories.

    It's pretty filling, too, even though it doesn't have rice or beans or barley. I nursed mine because it was hot and I wasn't hungry at all afterwards.
