    I figured I had enough salad on the hamburger (((LOL))) , I planned on corn (yummmmie) ...
    I guess I can just bake the potatoes for fries ? yes ?

    oven fries:

    take one russet potato (or more for more people)
    and cut the tato into wedges.

    Heat oven to 425, and wrap a cookie sheet with aluminum foil. Spray the foil well with PAM, (I use an olive oil sprayer), then add tato wedges, spray again and add salt to taste.

    Bake for 15 minutes, flip wedges, lightly spray again, and bake for 15 more minutes.

    MMMMM. Tasty.

    I eat these at least once a week. They are also terrific with cajun seasoning.

    How about Tangy Carrot and Raisin Salad?
    serves 4 with a 3/4 cup each

    2 c shredded carrots
    1/2 c minced green pepper
    1/3 c raisins
    1 TB minced onion
    1 small apple cored and shredded
    2 TB cider vinegar
    1 TB vegetable oil
    2 tsp sugar
    1/4 tsp celery seed
    1/4 tsp dry mustard

    1 head green cabbage shredded
    1 large carrot shredded
    or a 1 pound coleslaw mixture

    1/2 medium red onion chopped
    1/4 c raisins

    Dressing
    1 1/2 tsp prepared mustard
    1/4 c sugar
    1 TB oil
    1/4 tsp salt
    2 TB vinegar
    1/2 tsp celery seed

    Mock Garlic Mashed Potatoes (Cauliflower substituted)

    This is a tasty substitute for potatoes from the South Beach Diet Cookbook
    13 Minutes to Prepare and Cook


    Ingredients

    1 medium head cauliflower
    1 Tbsp. cream cheese, softened
    1/4 cup grated Parmesan cheese
    1/2 tsp. minced garlic
    1/8 tsp. straight chicken base or bouillon (may substitute 1/2 tsp. salt)
    1/8 tsp. freshly ground black pepper
    1/2 tsp. chopped fresh or dry chives, for garnish
    2 Tbsp. Smart Balance Omega Plus Buttery Spread


    Directions
    Cealn and cut cauliflower into small pieces. Cook the cauliflower in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.
    In a bowl with an immersion blender, or in a food processore, puree the hot cauliflower with the cream cheese, Parmesan cheese, garlic, chicken base or salt, and pepper until almost smooth.
    Garnish with chives and serve hot with pats of butter. Yield: 4 servings

    Fiesta Salad from Healthy Cooking magazine

    2 cups torn romaine
    3/4 cup frozen corn, thawed
    1/3 cup canned black beans, rinsed and drained
    1 medium tomato, chopped
    1 celery rib, chopped
    1 medium carrot, thinly sliced
    1/4 cup curly endive
    1/3 cup salsa
    2 Tbsp. reduced-fat sour cream
    2 Tbsp. reduced fat ranch dressing

    Combine first 7 ingredients in a large bowl. In a small bowl, combine salsa, sour cream and ranch. Drizzle over salad and toss to coat. 3/4 cup = 100 calories, makes 4 servings

    This is very delicious! It's already in the food data base. I wasn't really sure what curly endive was, so I just added a little more romaine and skipped it.

    I usually open up a can of Bush's Vegetarian Baked Beans....delicious & very low calorie, plus full of protein to help fill you up!
  • We love baked Sweet Potato french fries. I also make a nice pasta salad...

    bowtie,penne, shell or any kind of salad type pasta(whole grain or wheat) cooked per package instructions
    1/2 or 1 cantalope cubed depending on the # of people serving
    2 pears cubed
    mix all three ingredients with Poppy Seed salad dressing, I like "Brianna's" brand. Enough to nicely coat the ingredients.

    What a nice salad this is....

    Also try grilled asparagus...

    Clean and trim asparagus to remove woody end.
    Place asparagus into a gallon size ziploc bag, pour about 1 tablspoon extra virgin olive oil into bag, enough to lightly coat all pieces, then add parmasean or ramano cheese, enough to also coat each spear. Place on grill and grill until nicely brown oneach side.

    These are wonderful like little asparagus french fries! My hubby didn't like asparagus until I made this and he loves it.

    I actually baked reg potatoes for french fries ... brushed on a bit of virgin olive oil and seasoning .it was the first time I ever ever ever did that ... and I loved them ...!!
