500 calorie breakfast pizza
One greek-style flatbread pita (I used Papa Pita, from Costco)
Some pizza sauce (I used my wife's home-made pasta sauce, so good)
A generous ounce of mozzarella cheese
Crack an egg right in the middle (I actually put mine in a skillet to cook it for a few seconds first, shy of sunny-side up, so it wouldn't run off the bread)
Some salt and pepper, some garlic powder and oregano sprinkled all over the whole thing.
Bake in the oven at 375 for 20 minutes. While baking, cook up 2 slices of regular bacon, crumble it, and put it on top when it comes out.
The egg comes out with a nicely set yolk that you can still spread around just a bit. If you like a softer egg, just cook it for 3 or 4 minutes less.

26 g protein
6 g fiber
It's a bit high on the sodium, so there's something to think about. Also, your calories will vary based on what type of flatbread you use, etc. So, YMMV.
