How do you count Olive Oil when cooking?

So I just heated some oil in a pan and tossed some green beans in, I was graving Chinese food and thought that was a healthy home made option that would taste almost as good and it did. Now do I track the whole amount of oil or do we expect that some would have cooked off?

Oil doesn't 'cook off'.
Count it by the Tbs.

There's always that bit of oil left in the pan, but I could the whole amount I put in - as I figure that I'm probably under counting somewhere else.0
