    Simply bake it. I buy a large fillet and cut it in two or three pieces. Olive oil both sides, and add seasoning salt and pepper on top. Place skin side down on rimed cookie sheet lined with aluminum foil for easy cleanup. Bake it at 450F for about twenty minutes, until it flakes.

    Don't overcook! Cooking time varies depending on how thick your fillet is and how cold it is when you place it in the oven. You may need to take the thinner pieces out before the thicker ones. Also, the fish will continue to cook a little after it's removed from the oven. I stick a little fork in it and check. The fish should be opaque on the surface and still a little translucent in the center.

    Any leftovers are great eaten cold the next day.
