High protein whole wheat bread recipe

I just made up this white wheat bread recipe to use for loaves, buns, rolls and pastries. Sort of a go-to yeast bread for the house. It was surprisingly high in fiber and protein when I entered it all in and thought some of you might like to try it. The gluten was added to give the whole grains lift but turns out it adds protein too! This is a very soft, yeasty bread very close the white bread we love. The grain is actually a special type of white wheat, softer and milder tasting but still whole grain! We LOVE it!

I used a Kitchenaid to make the dough, but you can do it by hand or in a bread machine as well ...

1 cup water
1 egg
1 tbs. instant yeast
2 tbs. butter
3.5 cups (or even better, 420g) white wheat flour (King Arthur)
1/4 cup vital wheat gluten
1 tsp. salt
4 tbs. or 1/4 cup honey

I divided this into 16 servings, each of which is a 47g slice of bread (so you can go smaller) that yields

129 calories
24g carbs
4g fiber
5g protein
2g fat

And it's mighty tasty! You can make hotdog, hamburger or sloppy joe buns, add a bit of extra honey/sugar and make a pastry dough for cinnamon rolls and make loaves of all shapes and sizes.

    That nuts aren't that great for the calories per slice. 250 calories of bread in a sandwich - I don't think so.
