These little cakes/custard hybrids taste like HOME. Spicy pumpkin scent fills the air when they're baking. I'm still tweaking this recipe, so let me know if you have any ideas. One thought is perhaps double the amount of cream cheese and then make 18 of these little guys, so they have a more cheese-cakey taste. These come out more like a custardy-pumpkin cupcake. This original recipe I did is to die for, though:

Pumpkin Puree, 1 cup
Neufchatel Cheese, 1 8oz package
Large Eggs, 2
Granulated Sweetener, Splenda, 1/2 cup
Vanilla Extract, 1 tsp
Ground Cinnamon, 1/2 tsp
Allspice, 1/2 tsp
Ground Cloves, 1/2 tsp

Chol: 49

Preheat oven to 350 degrees F. Line a muffin tin with 12 cupcake/muffin liners. Mix all ingredients together in a medium bowl using an electric mixer. Pour mixture evenly in muffin tin. Bake for 30 minutes.
