Living in a Country With Limited Healthy Options...

I'm looking for anyone who may have advice for my situation. I currently live in Eastern Europe, in Minsk, Belarus. It's a challenge to find healthy food here. Fresh produce is a rarity come winter (which will officially start about next week), which means only frozen veggies. I keep doing research on healthy options but can't find the majority of suggestions.
There's no protein powder, vegetarian options, flax seeds, etc. or any other healthy foods. Imagine the bare minimum to survive, plus lots of unhealthy goodies, and that's Minsk.
Has anyone else lived in a place like this, with limited healthy options?
Does anyone have substitution options or ideas?
I'm craving something other than frozen vegetables every night...

Oh, I should add.. Due to the radiation from Chernobyl and my hypthyroidism, I cannot eat a lot of products from here... mushrooms, berries, dairy, meats... Yeah. Good times.
