Cauliflower Cheese "Grits"
Ingredients
1 small head cauliflower
1/2 cup chicken stock
1/3 cup reduced fat shredded cheese
splash of almond milk
sea salt & freshly cracked pepper
pinch garlic & onion powder
pinch cayenne pepper
Instructions
Trim cauliflower into florets, then chop in food processor in batches to about rice size pieces.
Put chopped cauliflower in a medium sauce pan with ½ cup water. Over low heat gently simmer until liquid has absorbed. Add in stock, then gradually add in cheese, stirring to combine until cheese has melted. Add almond milk to desired consistency. Season will salt, pepper, and cayenne to taste.
Notes
Depending on the volume of chopped cauliflower, adjust milk & cheeses to desired consistency.
Makes 1 decent sized serving:

i've had good luck subbing for mashed potatoes as well...obviously people know its not going to be exactly the same, but when you're trying to lose weight, things that are yummy and similar tend to work out just fine.0 -
If I am "ricing" the cualiflower, why isn't it cauliflower cheese rice? Or why not just leave the cauliflower in big pieces and call it cauliflower casserole?0

i've had good luck subbing for mashed potatoes as well...obviously people know its not going to be exactly the same, but when you're trying to lose weight, things that are yummy and similar tend to work out just fine.
