Need some "baking" ideas for healthy snacks at school

Now that I am returning to school on Monday, I will be more pressed for fixing meals for myself. I don't want to slip into "just grabbing" so I am planning to put together healthy snacks that can maybe be frozen or preserved through at least Mon. through Fri.

I can buy snacks like Kelloggs breakfast bars etc. but I would like to try using my stevia. I have coconut oil that could be used rather than butter, and also I have protein powder (but it does have some sugar in it, a little is ok I suppose) This may sound dumb but I don't know if there is protein powder without sugar? If there is, I can add my stevia.

Anyway, ideas? Especially, I would like to bake a big pan of something I could cut into "bars"??

    I looove the website yummly-it's like pinterest but just for recipes :) I've found tons of recipes on there and I've made quite a few of them for snacks for my kid's lunches. Things like raw apple muffins (oh. my. goodness.), bars, whole grain cookies, peach and apple crisps (which are great cold in a lunch sack), pear and apple sauces (which freeze great), etc etc etc. I highly recommend starting there-it pulls recipes in from all over the internet and I've found some really great recipe blogs in the process :) It's also very food allergy/special diet friendly (you can search for vegan recipes, eliminate recipes with certain ingredients etc).
