Ingredients:
Organic Red Quinoa, 1/4 cup dry
Crushed Garlic, 0.5 tsp
Italian Seasoning, 1 tsp
Vidalia Onion, 1/2 cup
Zucchini, 1 cup
Tomato sauce, 1/4 cup

Very simple and quick recipe:

Boil quinoa as directed
meanwhile Dry sauté chopped onions, zucchini, garlic, and seasoning
when vegetables are soft add tomato sauce
Drain quinoa and mix it in with the veggies and add cheese
